    Default Duck fat for frying Turkey

    Anyone know where to get reasonably priced Duck Fat. We are frying our turkey this year and rather than use peanut oil... would probably need around 3 gallons I assume.

    You won't be able to find 3 gallons of duck fat at a reasonable price, unless you consider $150 reasonable. Based on my rendering, it takes about 4 ducks to get a qt of fat, so you're looking at 48 ducks (or so) worth of fat.

    I've never found reasonably-priced duck fat in Philly, which is why I render my own for confit, etc.

    D'Angelo's in the Italian Market sells it for less than you'd find anywhere else--definitely cheaper than the little D'Artignan containers. But it's kind of insane to fry a whole turkey in duck fat and wouldn't be worth it for any slight difference in taste the duck fat imparts. I'd probably just use a neutral oil.
